Recipe for ‘Reception Vegetable Soup’

 

 

1 large turnip - cubed

2 large onions – chopped

6 carrots - chopped

3 potatoes - cubed

1 sweet potato - cubed

1 tin chopped tomatoes with herbs

3 vegetable stock cubes

half pint of water

 

 

 

Fry chopped onions in a little oil. Add the rest of the ingredients.

Bring to the boil and simmer until the vegetables are cooked and tender (about 30 - 40 minutes or 10 minutes in a pressure cooker.)

Using a potato masher, roughly mash half of the soup then return back to pan. 

Serve and enjoy. 

 

(soup can be frozen)
